Healthy Vegan Apple Crumble

It’s autumn and who doesn’t love an apple crumble?! This recipe replaces butter with coconut oil so that is vegan and uses Xylitol instead of sugar. I’m not a fan of sweeteners, however, in this recipe I’ve used xylitol as it is very sweet so you need far less of it than sugar. However,I would not recommend consuming large amounts of it.

Ingredients:

Apple Compote:

  • 10 small cooking apples
  • 1 tsp of cinnamon

Oat Topping:

  • 230g oats
  • 50g chopped almonds
  • 55g xylitol
  • 85g coconut oil

Method:

To make the Apple Compote:

1.Place the apples and cinnamon into a pan with a little water and cook until softened and starting to break up

To make the Oat Topping:

1.In a large bowl mix together the oats, almonds, xylitol and coconut oil with your hands until it looks like breadcrumbs

2.Put the apples into the bottom of a heat proof dish, cover with the crumble mix and bake for 25mins at gas mark 4 / 180 or 160 if fan

4 Ingredient Healthy Chocolate Mousse

Chocolate mousse that is healthy, tasty, dairy-free, gluten-free and packed full of amino acids!!! Yes you heard right, oh, and it only takes a few minutes to make! Avocados get a lot of bad press but I think they are fantastic, they can help to lower cholesterol, improve your skin and regulate your blood sugar. They are packed full of vitamins and minerals including; Vitamins C, E and potassium.

Ingredients:

  • 1 avocado
  • 2 tsp cacao powder
  • 1 tsp honey or maple syrup
  • 2 tbsp fresh orange juice
  • Orange zest to taste

Method:

  1. Blend all the ingredients with a hand blender (you may need to add more orange juice if the mixture is too thick)
  2. Put into serving dishes and chill in the fridge until you want to eat it!

Fancy a mint chocolate mousse?

Swap the orange for a couple of drops of peppermint oil and add a good splash of almond milk.
